CoD:4 was pretty amazing, I wouldn't describe it as "Best Game Ever" but it was an exceptional FPS in an age where it's hard to prod your head about the mass of other FPS' out there.

To echo what Quantum has said,I would think that every era will briing along a new superb game that we will all give thumbs up. All is changed from one good game per year to one every other month due to the fantastic advances of graphics and quality of PCs.

Any Unreal Tournament game. So far, in the series for a fanboy like me.. There hasn't been any let downs only sick and twisted improvements. With the graphics improving every step of the way, and the game modes being harvested in masses, there is nothing wrong with any UT. If we're speaking all consoles then... Here's my list.

PC: UT Series
PS2: Hitman Series
PS3: UT3
Xbox: Halo
360: COD4
SNES: Super Mario Brothers
Game Boy: Pokemon (Gotta Catch'em All )

There is probably a lot more.. I just can't think... Being 3:12AM, posting this stuff.

Mortal Kombat Trilogy (PS1)

Spore gives you a bit of an epic sense of achievement as you finally advance to space;
Portal is the best new gameplay mechanic in some time;
Half-Life 2 has a good story,
and Legend of Zelda: Majora's Mask is enjoyable enough to make me feel like a kid again,
But I don't think you can beat the beatiful, open environments of Oblivion. Combine that with it's modability and you my favourite sort of game.

PS1: Omega Boost ( Underrated terribly, <3 this game on so many levels )   
PS2:  (RPG) Shin megami tensei: Nocturne
360: This is a tuffy... i have well over 100 games now, but Mass Effect one and two, as well as fallout 3 come to mind.
 
  Favorite out of those would be Nocturne. Without a doubt.
